Season 4 Episode 5

Mediterranean Chicken Roulade

Fall 2009

Video by Gary Olsen, Audio Jim Barefoot

This is an hour-long special dedicated to one fanstastic recipe, Mediterranean Chicken Roulade. We edited this show with a light hand, cutting minimally, almost preserving the real-time nature of the preparation of this dish. This is because its presentation (the visual) is as important as its taste, and it's probably among the most sophisticated recipes we've ever prepared. But it was worth every delicious moment of it.

At the start of the show, Jim Terry, our executive chef of Kids in the Kitchen takes our kids on a journey we call "Shopping with the Chef." This segment has become very important to the success of our show since it provides a valuable opportunity to understand the ingredients that comprise a recipe. How shopping for individual high quality items and comparison shopping not just for price but for nutritive value is like a treasure hunt. And the treasure, according to Jim Terry, is better health.
