Sopa Seca means "dry soup." It's a traditional name for a caserole dish (in this case) that Jim Terry has fused with ingredients and techniques learned in preparing similar dishes that involve pasta (whole grain), and sausage (Italian-style). The neat thing about this dish is you don't have to boil water to prepare the pasta. Whole grain angel hair pasta is used in this particular recipe, and it is sauteed dry in a frypan with a small amount of extra virgin olive oil. The stock and juice from the tomatoes are absorbed by the pasta during the baking cycle, and the result is extraordinary.
