Shrimp Papiote with Mocho Sauce

Papiote is Spanish and in this context means "cooked in paper." Jim Terry shows how shrimp and vegetables can maintain their rich flavors and nutrients by steaming within a paper enclosure made of parchment paper.

Shrimp combined with vegetables and a splendid citrus mocho sauce are cooked in a parchment paper envelope. Steam developes inside the envelope when placed in an oven cooking the contents to perfection.
